Sometimes you might come across a great deal at the store and want to give it a whirl, but just aren't sure where to start.

We have few tips on how to make the best pressure cooker beef ever. I suggest you follow them for this cut, a Ninja Foodi tri tip, and any other thick piece. The first one has to do with the way you release the steam, that is key!

There are many different type of roasts out there as you know. You can use several varieties, some are less expensive than others. The cheapest would be air fryer chuck roast, which you can make in this machine too. I'd make both and decide for yourself which you prefer.

If you want to use the best I suggest a top round roast like this one:

It has a richer flavor than if you were to choose a cheaper variety. You can use a bottom round roast too if that is all your butcher has on hand.

Do you cook a roast with the lid on or off?

When cooking roast in a Ninja Foodi of course the pressure cooker lid needs to be on and secured. You need the steam valve sealed as well. In the oven I suggest using a lid too to keep the steam and juices in.

How long do you pressure cook beef?

That depends on a lot of factors. If you cut it into smaller pieces like shredded beef it can take 20 minutes. BUT if you use a larger thicker cut it can be upwards of an hour or a bit more.

For a more medium rare cook it is best to pressure cook for 25 minutes and naturally release steam for 25 minutes. That will keep the center pink while cooking the outer layers.

Our preference every time is to cook it longer in order to shred it with forks. That way it can be made into sliders, served over rice, or made into tacos.

That's right. The #1 tip for cooking meat in an Instant Pot is to allow the steam to naturally release vs. a quick release. This will give you the tenderness you want.

  • Another is if you want a bit of a char on the outside when it's done, you'll need to do this ahead of time.
    • Just set your pot to saute with a bit of olive oil and sear the meat on all sides.

Then you'll want to remove the chuck roast, set aside, and deglaze your pot to remove all brown bits off bottom so you don't get that dreaded burn signal.

  • Once that is done, put your meat back in and start the pressure cooking process.

Tip #3 is when you're adding other ingredients you will need to do that at the end. If you add them at the beginning and it takes a good hour to cook your meat they will be complete mush.

  • The exception to this rule is with potatoes. We add them whole at the beginning when making our corned beef and cabbage.
    • When left whole, and if they're rather large, they will come out fall apart tender but still great.

In that recipe we use them as a trivet of sorts with the meat on top and they come out incredibly flavorful.

Let's talk about liquid. Yes with any Instant Pot recipe you always need some sort of liquid. You can use water but it's so much better if you use something with flavor like:

  • Beer
  • Beef broth or chicken broth
  • Coca Cola
  • Red wine

I'm not just talking about this roast beef in Ninja Foodi recipe, but in general these are the best choices in my opinion. This is what you'll need to make this one in particular.

Beef Roast in Instant Pot

  1. Roast – timing below accounts for a 4 lb top round roast piece
  2. Carrots
  3. Potatoes and carrots – cut into quarters
  4. Onion – I like to keep chunks large so they don't get as soft

  1. Garlic
  2. Beef stock or broth
  3. Olive oil – to brown the outsides
  4. Salt and pepper
  5. Garlic salt
  6. Worcestershire sauce

The larger you cut the vegetables the firmer they will stay, but still will become soft. You don't want a mushy mess so keep them big.

To cook it medium rare vs. shredded like you see below, follow these steps and timing, it is different than below:

  • Season your meat well as you wish on all sides.
  • Preheat your pot on the broil setting for 12 minutes total.
  • Place your trivet down and upside down so it is low to the bottom with meat on top.
  • Allow to cook on your broil setting for 25 minutes and then leave in when the timer goes off.
  • Do not touch the lid, leave it on until the timer counts up and reaches 25 minutes.

Then lift meat out and set on a cutting board. Allow to rest for 15 minutes before slicing. Serve with gravy on the top.

Ninja Foodi Roast Beef

  1. Saute

    Put butter and olive oil into your Foodi and set pot to saute setting.
    Season your piece of beef with salt and pepper liberally.

    When butter is melted add roast into pot and sear on each side until well browned. About 1-2 min. on each side. Then turn pot off.

    Remove meat and deglaze pressure cooker pot by adding a bit of your broth. Scrape the bits of stuck on meat off bottom of your pot (so you avoid the WATER or burn notice).

    Set to saute again, add your onions into pot until they are softer and translucent, then add garlic and cook for 1 more minute. Turn off pot!

  2. Cook

    Put beef back into your pot with onions, Worcestershire sauce, and your beef broth on top.

    Close your pressure cooker lid (one that is not attached) and steam valve. Cook on high pressure for 50 minutes cooking time.

    Then allow steam to naturally release when done. Lift lid when steam is gone and add vegetables.

    Close lid again and set on high for 6 minutes. Then do a quick release. Lift lid and remove beef. Allow to rest for 5 minutes before slicing or shredding to serve.

Once everything is done remove your roast and allow it to sit before slicing so you maintain the juiciness. You can thicken the sauce with cornstarch if you'd like.

We love Instant Pot pot roast recipes for dinner when we are serving a large crowd! You can make a slow cooker roast too but that does take all day.

Follow these basic instructions to make Instant Pot pot roast. If you forgot to defrost it, follow this frozen roast in Instant Pot directions instead.

As I said before you can use any brand of pot you have. Since this one doesn't require the air fryer function you don't need to use a Foodi.

Remember that naturally releasing steam can take 20 minutes to 30 minutes to complete so keep that in mind.

  • Remove meat and deglaze pot by adding a bit of your broth and scraping bits of stuck on meat off bottom of your pot (so you avoid the WATER or burn notice)

  • Set to saute again, add your onions into pot until they are softer and translucent, then add garlic and cook for 1 more minute. Turn off pot!

  • Put beef back into your pot with onions, worcestershire sauce, and pour broth on top.

  • Close pressure cooker lid (one that is not attached) and steam valve and set to high pressure for 50 minutes.

  • Then allow steam to naturally release when done. Lift lid when steam is gone and add vegetables.

  • Close lid again and set on high for 6 minutes. Then do a quick release. Lift lid and remove beef.

  • Allow to rest for 5 minutes before slicing or shredding to serve. If you want to make gravy out of drippings in the pot set to saute again at the end once food is removed. In a bowl whisk 3 tbsp cornstarch with some hot liquid from pot. Whisk until smooth and add back in. Allow to bubble and thicken.
